How menu engineering works in Jery

Choose a date range and Jery compares your costed menu items by how many sold and what each contributed after ingredient costs. Using the median sales and earnings for the selected list, it shows which drinks are stars, workhorses, puzzles or candidates for reworking. With tax tracking on, margins are calculated excluding sales tax.

From the POS to the menu

Connect your POS for nightly sales updates, or import sales from its export files. Jery matches those sales to your recipes, so you can review what's selling and what each drink earns.

  1. Every night

    Sales arrive every night

    Your POS syncs overnight, with late voids and refunds landing on the days they belong to. Any other POS comes in from its export file.

    Import the same file twice and nothing double-counts. The preview shows exactly what will be replaced before anything is written.

  2. Once per item

    Match each POS item to its drink once

    Your POS might call it PPR PLANE, while your recipe book calls it Paper Plane. Jery suggests the match, and you can accept it, correct it or create a new drink. Once confirmed, Jery remembers the decision.

    Tips and gift cards go to other sales. Food you don't stock can carry a margin you set, marked as an estimate.

  3. Every week

    Compare any period with a baseline you choose

    Compare any week, month or custom period with the previous period, the same dates last year or your typical performance. Jery flags public holidays, so an unusual Monday doesn't look like a lasting trend.

    Cut it by your own sales categories: cocktails, wine by the glass, beer, food. Export any table to CSV.

  4. Every morning

    The changes worth a look each morning

    Jery checks your sales each night and highlights what deserves attention. A record Saturday, unusually high comps or a drink that's stopped selling. Every finding shows the numbers behind it, and you can dismiss anything you've already dealt with.

    Findings start once there are about eight weeks of sales. Before that, Jery stays quiet rather than guess.

Sales and menu engineering questions

Does it work with my POS?

Toast, Square, Clover and Oracle Simphony connect directly and sync sales nightly. For other POS systems, upload a CSV or Excel export. Jery recognizes the columns and remembers the format for next time. See integrations.

What if a drink isn't costed yet?

You can still see how many sold. Once the POS item is matched to a costed recipe, Jery adds its margin and places it on the menu engineering chart. Unmatched items show what needs fixing.

Can I bring in last year's sales?

Yes. A direct connection can backfill your history, and any export file can cover any period, imported in any order.

We sell food too. Does that count?

Yes. Food sales from the same POS can appear under their own category, so you can review kitchen sales separately or alongside the bar. Food you don't stock can carry an estimated margin you set, marked as an estimate.

Does Jery change prices on my POS?

No. Jery suggests a price and shows what it does to margin. The price in your POS is always yours to change.
